The Legend of Kaju Katli

Kaju Katli has a rich history that dates back to the Mughal era. Legend has it that the Mughal emperor, Akbar, introduced this delicacy to India. Over the years, it evolved and took on its own unique Indian identity, becoming a beloved sweet during Diwali and other festive occasions.

 

The Essence of Divine Kaju Katli

Ingredients:

  • Cashew Nuts (Kaju): 2 cups
  • Sugar: 1 cup
  • Water: 1/2 cup
  • Ghee (Clarified Butter): 1 tablespoon
  • Cardamom Powder: 1/2 teaspoon (optional, for flavor)
  • Silver Varq (Edible Silver Leaf): for decoration (optional)

 

Directions:

1. Preparation of Cashew Paste:

  • Begin by grinding the cashew nuts into a fine powder using a high-speed blender or food processor. Ensure that the cashews are completely dry to prevent them from turning into a paste due to the natural oils.
  • Once ground, sift the cashew powder through a fine-mesh sieve to remove any coarse particles. This step ensures a smooth texture in the final product.

2. Creating the Sugar Syrup:

  • In a heavy-bottomed pan, combine the sugar and water. Stir well to dissolve the sugar, then place the pan over low heat.
  • Continue to cook the sugar syrup until it reaches a one-string consistency. To test, take a small amount of syrup between your fingers. When you pull them apart, a single thread should form.

3. Mixing Cashew Powder and Sugar Syrup:

  • Add the cashew powder to the sugar syrup and stir continuously on low heat. Make sure there are no lumps and the mixture is smooth.
  • Add a tablespoon of ghee to the mixture. The ghee not only enhances the flavor but also prevents sticking.
  • Continue to cook the mixture, stirring constantly, until it thickens and starts to leave the sides of the pan. This should take about 7-10 minutes.

4. Flavoring (Optional):

  • If you wish to add a hint of aromatic flavor, this is the time to incorporate cardamom powder. It brings a delightful fragrance to the Kaju Katli.

5. Shaping the Kaju Katli:

  • Transfer the thickened mixture to a greased plate or a flat surface lined with parchment paper. Allow it to cool slightly.
  • Using a rolling pin, gently roll out the mixture into a thin, even layer. Aim for a thickness of about 1/4 inch.
  • While it's still warm, cut the rolled-out mixture into diamond or square-shaped pieces.

6. Decorating (Optional):

  • For an added touch of elegance, you can decorate each piece with a delicate silver varq.

7. Allowing to Set:

  • Let the Kaju Katli cool completely. As it cools, it will firm up.

8. Serving and Storing:

  • Once cooled and set, gently remove the pieces and serve. Store any leftovers in an airtight container to maintain their freshness.
